December: Champagne

We made it another year. Let’s celebrate! And celebrate with a truly stunning (and super interesting) Champagne. Everyone, the Gastronomists and the Naturalists alike, will be getting one very special bottle for December.

NV Christophe Mignon Champagne Blanc de Noir Brut Nature ‘Pur Meunier’  –  Christophe Mignon, a 4th generation Champagne producer, is the Pinot Meunier king. His vineyards, planted by his great-grandfather in the Valle de la Marne, are dedicated solely to the grape variety. He is devoted to working with Biodynamic principles and techniques (as well as phytotherapy, homeopathy and geobiology) in the vineyard and the cellar, following the lunar calendar and the rhythms of nature.

His NV (always a 50/50 blend of the two most recent vintages) 100% Pinot Meunier is bone dry with zero dosage. The Pinot Meunier brings floral aromatics and red fruit richness, but there’s structure, fresh minerality, and finesse. It’s aged sur lie in bottle for 2 years and was disgorged April 2015.
